I must admit that soccer, or football, is not my favourite thing to watch and I certainly don't claim to know an awful lot about it. But I have been informed from the staff at the office that today is the begining of Euro 2016, the European international soccer competition that happens every four years. Nothing shouts Spring like lemon! This bundt cake is full of the fresh and zesty citrus fruit. I must say that I have become obsessed with lemon desserts recently. It's a great choice for all the family, sweet enough for the kids, and subtle enough for the adults. I have a few lemon recipes that I make frequently, but I wanted a change, and so I went to Cassie, who shared her Vegan Chocolate Chip Cookies a few weeks ago, for something new.
